Kidney Bean Salad

This is the one I always make. Instead of the spices, you can use 1 T. or more of Good Seasonings Italian salad dressing dry mix.

KIDNEY BEAN SALAD
2 c. kidney beans
1/4 c. wine vinegar
3 tbsp. oil
1/4 tsp. oregano
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. diced green pepper
2 tbsp. chopped red onion

Drain kidney beans. Combine vinegar, oil, oregano, salt, pepper, diced green pepper, and onion. Chill in refrigerator

what drives me nuts is I see a recipe I like (like this one!) and I know with the picky damn eaters in my house I will most likely not get to make it!!!!! grrrrrrr

Dee, it'll keep in the fridge - just make it up, don't let them know what you are eating different (they might want to try it that way), and enjoy!
