View Full Version : Chicken Fettuccini w/lemon garlic sauce

This is a great one to use with leftover roasted chicken - even grilled salmon or halibut would work as well :)

1 lb. fettuccine
3 garlic cloves, minced
2 Tbsp butter (not margarine if you can help it, it really effects the taste)
2 Tbsp extra virgin olive oil
8 oz crimini mushrooms, cleaned and sliced
1/2 chopped red pepper
1 cup heavy cream
1 tsp kosher salt
1 tsp fresh ground pepper
1/4 tsp ground nutmeg
2 Tbsp lemon juice and zest
1 1/2 - 2 cups cooked chicken, shrimp or fish
chopped parsley
1 cup Parmesan cheese

Cook pasta according to package directions. Meanwhile, in a 12-inch skillet, heat butter and olive oil over medium heat until butter has melted. Saute red pepper and mushrooms until soft then add garlic and lemon zest, stirring constantly until garlic is just softened (do not burn). Add cream, salt, pepper, nutmeg and continue to cook until cream is heated through. Add half of the parmesan cheese and cooked chicken/seafood stir until completely mixed in.

Drain finished pasta and toss with lemon juice. Add pasta to sauce and toss until well mixed. Top with remaining parmesan cheese and chopped parsley and there you have it! Quick and easy dinner :biggrin:

Sounds great. I love just about anything in a cream/parmesan sauce :thumb::thumb:.
