1 flank steak
1/2 tsp. fresh ginger
1 green onion, diced
1 garlic clove, minced (I used 2)
3/4 cup oil
1/4 cup soy sauce
3 T. honey or sugar
2 T. lemon juice

Combine ingredients and marinate flank steak at least 4 hours or overnight. Grill or use the broiler and sear for abouty 5 minutes on each side. You want this medium rare or it will be too tough. Let rest for 5-10 minutes and slice against the grain.

Saute or grill onions, green and red peppers.

Soften tortilla in dry skillet. Add sliced steak, peppers and onions and sour cream if you like. Roll up and eat.

Very nice, but that picture of that steak.... wow.
I can't believe I eat fajitas more now that tacos in a hard shell. Good stuff.

Hahaha........It's me!!! Seriously!

I took over the grill about 5 years ago. DH can't stand for any length of time so he handed the tongs over to me.

Looks great. That's how I make them, only mine are swimming in hot sauce. Try spreading a bit of refried beans on the tortilla.

Chow, we really need to wean you off those hard taco shells. lol

Good idea on the refried beans, I'll try that. I did add a few shakes of Cholula hot sauce to mine. LOL

You can still eat tacos, just get REAL tortillas not those hard Americanized thingies.

Those fajitas are making me drool. I know that once we get back on our feet, PeppA is probably going to have me make some.

This past month, I've had canned Ranch Beans on my line as a side for one of my specials. I've found that I like the ranch beans a whole lot better than refried! I'd spoon a little of the beans into the tortilla along with all the other goodies, meat, onions, peppers, cheese, sour cream/crema, etc.
