2 lbs fresh okra
Celery leaves
4 garlic cloves
4 dill sprigs
2/3 quart water (1 2/3 c)
1 2/3 c white vinegar
2 tbsp salt
Heat water, vinegar and salt to boiling. Fill canning jars with okra adding some celery, garlic and dill to each jar. Pour boiling water mixture over okra to cover. Let stand 1 month before eating. Makes 4 quarts.
Not one of my favorites. The only good okra is a fried okra :D
Thanks for sharing Jim. I've never had okra ...and have no desire to try it. Just doesn't sound good to me. :hide:

fried is great. Any other way it is covered with slime. My brother and I are the only ones in the family who don't like it though.

To fry okra, slice it in sections, roll in cornmeal breading, and drop in hot oil in a cast iron pan.

I grew up on Fried Orka !!!:thumb: I love that stuff . Had my first pickled Orka a few years ago and love it !!!! Great stuff and it should be in everybodys garden !!!!

I didn't like okra when I was a kid, but after I married a Southern gal, learned to love it!

I've had okra fried and it is delicious if cooked right. But i don't ever remember having it pickled, although i would like to try sometime.
Anything pickled is a winner. :)
