This is awesome on grilled brats or on hot pretzels!

HOT PEPPER BUTTER

50 Peppers (Hungarian hot wax is preferred but add a few red or green for color contrast)
1 quart of yellow mustard (yes the cheap stuff works just fine)
1 quart white vinegar
5 cups sugar
1 Tbsp. kosher salt

Grind or finely chop the peppers in a food processor. Combine all of the above ingredients, bring to a boil and simmer.
In a quart jar with a lid combine and shake well; 1 pint of water 1 1/2 cups all purpose flour. Stir into pepper mixture.
Simmer another 5 minutes. Ladle off into sterile jars and process in a hot water bath.

Thanks Joe. Using hot wax it is a mild heat but you can always boost the octane with some other peppers.

I'm slipping, try it as a BBQ glaze on chicken or pork.

I was thinking perhaps using with a Cajun or spicy mustard as well as a mix of peppers. It would probably make a good glaze for pork or chicken as well as on hot dogs, brats etc.
