Broccoli Cheese Soup or Cheese Soup (just leave out the broccoli)
4 servings

This is good to make for a buffet........maybe a football party buffet :mrgreen:. You can put it in a crock pot on low, and it holds up very well.

2 T butter
1/2 medium white onion
1 to 2 stalks celery
1 to 2 carrots
2 14 oz cans Swanson chicken broth
1 can Cream of Potato soup
1/2 lb Velveeta cheese, cubed
1 small box chopped, cooked broccoli, or an equal amount of fresh, chopped, cooked broccoli
4 oz sour cream


Use a food chopper/processor to finely mince the onion, celery, and carrots. Melt the butter in a skillet, add the minced vegetables, and saute until the vegetables are tender.

Combine the chicken broth and the vegetable mixture in a large sauce pan, and simmer for 30 to 40 minutes. Add the cream of potatoe soup, and use an immersion blender (or potato masher) to break up the chunks of potatoes. Add the cubed Velveeta.

Once the cheese melts, add in the (very well drained) cooked broccoli. Mix thoroughly, remove from heat, and stir in the sour cream.



If you really want to be bad, top with an additional dollop of sour cream and bacon bits.

I really like my broccoli chopped a little smaller - :oops: .

Hey Cooksie, looks delicious, going to give it try. What happens if I do not own a food processer/blender? Just finely chop? I does look relly yummy and especially winter months, molre more yummy. Thanks, sh
