never made an intro post before so here goes.
Fun Facts about Pancho:
I live in Philly PA and have 2 crazy dogs and an evil cat.
Ethnically I'm Italian but I started cooking when I lived in TX so Italian, and Tex-Mex are biggies for me.
I have a moderate obsession with Cast Iron and I am a terrible gardener.
I have recently discovered the wonders of rendering your own lard... my arteries hate me.

I'm with you Pancho since I'm also part Italian and lived in Texas for 10 years. I love both Cajun foods and Tex Mex for sure but also a lot of other types as well since I was born in Florida.

oh don't get me wrong Joe... I love all sorts of food... Italian and Tex-Mex is what I can "do" well
Texas was a real eye-opening on food for me totally different thing going on down there than in the Northeast.
I try to forget about my Irish half when it comes to cooking... save those genes for the drinkin
